Marcie's Marvelous Pumpkin Bread
This is an old family recipe originally created by a man named Art. Problem is, the recipe is so old that absolutely no one in my family remembers who he is! I’ve adopted the recipe as my own, and his forgotten legacy lives on through this delicious bread.
If you make it, you must let me know!
Prep Time: 15 mins
Cook time: 1 hour
Makes: 3 loaves
3 1/2 cups flour
2 tsp. baking soda
1 1/2 tsp. cinnamon
3 cups sugar
1 1/2tsp. salt
1/2 tsp nutmeg
1 cup oil
2/3 cup cold water
16-oz. can pumpkin
1 tsp. vanilla
1 12oz bag semi sweet chocolate chips
In a large bowl, mix together the dry ingredients above. In a medium bowl, stir together the wet ingredients and add to the bowl of dry ingredients. No need to use a mixer.
Once fully combined, stir in the semi-sweet chocolate chips. Divide mixture into three greased loaf pans and bake at 325 degrees for one hour. Check with a toothpick to see if the bread is done in the center.
To Freeze: Wait until fully cooled, wrap each loaf tightly in saran wrap, then in two layers of aluminum foil. Freeze up to 9 months.
